"For homemade idli or dosa batter, soak Urid Gota for 4–6 hours, then grind until smooth and fluffy. Combine with soaked rice, allow the batter to ferment and cook as desired.
For crispy medu vadas, grind soaked lentils with minimal water, season with green chilli, ginger and curry leaves, then shape and fry until golden.
Urid Gota can also be cooked with turmeric, cumin and garlic for a creamy lentil curry."
